Technically, a coffee cake is any cake that is meant to be eaten with coffee. I take issue with that. As anyone who has ever interacted with me at any point in time knows, I love coffee, and I would drink it with most baked goods. In my humble opinion, if you’re going to call a cake a “coffee cake,” it should have coffee in it to distinguish it from the other baked goods.
This coffee cake recipe features instead a cake with instant espresso mixed into the batter, a cinnamon sugar crust, and a coffee syrup poured on top to add that extra oomph. In other words, it's a winner.
The cake is a simple vanilla batter, and it’s all-too-easy to sub in a simple vanilla cake mix. If that’s the route you’re taking for this particular baking adventure, just make the topping separately and add it to the cake mix as made according to the box instructions. Enjoy!
