Welcome to the Friday recipe for paid subscribers, a cookie recipe that surprised me with how delicious and simple it was. Last week, I told you that my kitchen is out of commission, which drove me to spend a day prepping like it was Y2K all over again. In the two weeks since that crazy day of anticipatory cooking, the idea of even having the option to cook something from scratch or using a shortcut is sounding better and better: I’m going on three weeks of not being able to cook like I usually do.
I have been joking with friends recently that lacking a kitchen has been fantastic for my productivity. Usually when I’m working from home, I wander in every hour or so, looking for a distraction from whatever invoicing, editing, or other boring work I find myself doing. That distraction could be simple (a handful of granola or a couple of chips) or complex (the sudden urge to deep clean my floor boards or restart my sourdough starter).
None of those distractions are an option right now, though, so I’m reduced to being productive and day-dreaming about all of the things I’ll bake and cook when my stove is plugged back into the wall. One such thing is cookies.
This recipe, which is continuing our theme of kitchen shortcuts and how to level them up, starts with sugar cookie dough. I bought a grain free sugar cookie dough mix, but I’m sure you could do this with cutouts or little circles of pre-portioned dough. The magic here isn’t in the shortcut itself; just what you make of it. And that is my life lesson for the week.
